(My Favourite) Cherry Loaf                             Mimi Barbour – Xmas Recipe

 

1-¾ cups flour

2 tsp baking powder

1/3 tsp salt

½ cup butter (soft)

1-cup sugar

3 eggs - separated

1 cup chopped maraschino cherries (green and red)

½ cup milk

½ tsp almond flavouring

 

Sprinkle a little of the flour over the chopped cherries and set aside.

 

Mix the sugar into the soft butter, and then add the 3 egg yolks one at a time mixing well after each one. Add in the almond flavouring.

 

In a separate bowl, sift the flour, baking powder and salt together.

 

Next, alternately add some of the flour mixture into the egg and butter mixture and then a small amount of milk. Keep doing this until all is in one bowl. Next beat the egg whites in a large bowl and fold the batter in.

 

Add in the cherries and put in a greased loaf tin.

 

Bake at 375 for the first 30 minutes and then in a 350 oven till done – check with a toothpick as it needs to cook in the middle. The top should break apart somewhat and it can take anywhere from 1 to 1 ½ hours to bake.

 

Cool before removing it from the pan.
